Vegetable and Lentil Soup

This soup is delicious!   It makes so much that I had to freeze half of it!  It so simple to make.





Ingredients 

2 tbsp olive oil
3 medium yellow onions
3 leaks (while parts only)
1tsp dried thyme
1tsp cumin
Salt and pepper to taste
3 garlic cloves
4 carrots 
3 sticks of celery 
I package of dried lentils
3 quarts vegetable stock
1/4 cup tomato paste
3tbsp red wine 
Parmesan cheese

In a pan cover lentils with boiling water and let it sit for 15 minutes
Heat  olive oil in pan
Add chopped onion, leak and garlic and  saute on medium heat for about 10-15 minutes until tender.  Add thyme, cumin, salt and pepper then carrots and the leaks.  
Saute for another 10 minutes
Add the vegetable stock, tomato paste and the lentils, leave to simmer for 1 hour uncovered
Add the 3 tbsp red wine at the end
Sprinkle with Parmesan cheese at the end!
 

My husband ate this for his lunch at work and loved it! But that was probably because I added a load of crushed dried pepper to his!   This is so much better than the lentil soup you get in a can!
