Vegetable and Lentil Soup

This soup is delicious!   It makes so much that I had to freeze half of it!  It so simple to make.





Ingredients 

2 tbsp olive oil
3 medium yellow onions
3 leaks (while parts only)
1tsp dried thyme
1tsp cumin
Salt and pepper to taste
3 garlic cloves
4 carrots 
3 sticks of celery 
I package of dried lentils
3 quarts vegetable stock
1/4 cup tomato paste
3tbsp red wine 
Parmesan cheese

In a pan cover lentils with boiling water and let it sit for 15 minutes
Heat  olive oil in pan
Add chopped onion, leak and garlic and  saute on medium heat for about 10-15 minutes until tender.  Add thyme, cumin, salt and pepper then carrots and the leaks.  
Saute for another 10 minutes
Add the vegetable stock, tomato paste and the lentils, leave to simmer for 1 hour uncovered
Add the 3 tbsp red wine at the end
Sprinkle with Parmesan cheese at the end!
 

My husband ate this for his lunch at work and loved it! But that was probably because I added a load of crushed dried pepper to his!   This is so much better than the lentil soup you get in a can!




Bread

The new addition to our kitchen.......  a bread maker!!!!!!!



It worries me how the bread here hardly ever gets moldy (same with the cheese but I'm not making that!!)  I can have bread in the pantry for over a week and it looks the same as when I first bought it.
I went back to the UK this year and noticed the bread didn't last too long before the green, fluffy mold started to appear.  They still load up their bread with preservatives and additives!!


 So I decided to make my own bread!  Can you imagine waking up to the wonderful smell of freshly baked bread in the morning?  The bread maker comes with a booklet with lots of different recipes.  I can't wait to try out the whole wheat breads especially the pumpernickel bread!!  The girls are going to love it!


Now I need to start working on getting my husband to buy me a KitchenAid...

Dear diary....

Haha no this isn't my diary! I just realised today I have the worst memory in the whole entire world!!!!!! So I decided to start blogging.

I'm going though some changes in my life, I started college this fall and I'm trying to live a more healthier lifestyle. I exercise anyway and try to eat right but I'm not perfect and I know I can do better.

This week Darrin and I decided to cut out meat from our diet and try to eat more clean foods. Its going to be hard, but I'm really looking forward to trying out new recipes.  If they are any good (or my kids actually eat the dinners) I'll share them :o)
